Recipe: Guiltless Coleslaw

One serving of coleslaw from a fast food restaurant can contain as much as 11 grams of fat. Here is a lower-fat version that only has 3 grams of fat per serving and makes a great side dish with a sandwich. You can also use it to top a BBQ pork sandwich or a reduced-fat hot dog.

Ingredients:

Salad:

  • 6 cups packaged shredded cabbage and carrot mix for slaw
  • ½ cup diced celeryDressing:
  • ¾ cup non-fat plain yogurt
  • 1 tablespoon cider vinegar
  • ¼ cup reduced-fat mayonnaise
  • 1 tablespoon sugar 
  • 2 tablespoons non-fat milk
  • 1 tablespoon Dijon mustard
  • ¼ teaspoon cayenne pepper (optional)
  • White pepper to taste (be careful — it’s spicy!)

Instructions:

  1. In a large bowl, combine the cabbage, carrots and celery.
  2. In a smaller bowl, stir the dressing ingredients.
  3. Mix the dressing with the vegetables.
  4. Chill for 2 hours. Re-stir if dressing separates before serving.

Makes six servings.
