Fruitful Muffins

MuffinsThese muffins are great for adding both fruit and fiber to your diet. Make these ahead of time for a great on-the-go breakfast or snack.

• 1 cup quick or old-fashioned uncooked oats
• ½ cup all-purpose flour
• ½ cup whole wheat flour
• 1 tablespoon baking powder
• ½ teaspoon cinnamon
• ½ cup mashed ripe banana (about 1 banana)
• ½ cup dried fruit, such as raisins, apricots, cranberries, or blueberries
• ¼ cup vegetable oil
• ¼ cup brown sugar
• 1 egg white
• 1 cup 1% milk

1. Preheat oven to 400°F
2. Lightly grease a 12-pan medium muffin tin or line with paper baking cups
3. In a large bowl, combine oats, flour, baking powder, and cinnamon. In a separate bowl, mix banana, dried fruit, oil, sugar, egg white and milk. Add to oat mixture and stir just until dry ingredients are moistened.
4. Fill muffin tin about ¾ full and bake for 20-25 minutes or until golden brown.
