I ran across a detailed journal article about the effects of climate variations on a whole list of specialty crops, some of which are grown in the Southeast and others of which are from other climate regions such as the tropics.   In this Elementa Science review article, the authors looked at published studies on impacts of warmer and cooler temperature, wetter and drier conditions on chemical properties of different specialty crops ranging from apples to tomatoes.  They are summarized in Table 1 of the article.

What they showed was that there is no simple relationship between warmer temperatures, for example, and the yield or nutritional value of different crops.  Clearly, more studies are needed for individual crops so that we can understand how a changing climate will affect the quality and marketability of each crop.
